Vineyards: 20 year old vines Yield: 4 ton per hectare of small berries which give super concentrated juice and wine. Winemaking: The grapes were hand picked at 25° B from 20-year-old vines at a crop level of 4 tons/hectare (1,8kg /vine). After de-stemming and crushing the fruit, the must was left to cold soak at 10° C for 3 days with 2 daily punch downs. A gentle pressing was followed by a settling of 48 hours at 5°C. After racking, the must was fortified and left to settle in the bottle. Ageing: Always pleasant and drinkable. Yet this is the kind of wine that you buy and keep to celebrate your favourite offspring’s 18th birthday – it will last forever if matured under perfect conditions! Try This: Serve as a sundowner cocktail as a “muscatini”. The wine is chilled down and served in a martini glass with crushed ice. Garnish with a mint leaf or a rose petal. Be smart!
