Soft creamy nose of peach, apricot and violets which is rounded off with subtle oak flavours. All these are beautifully carried through to the palate where the intense ripe fruit flavours combine in a fully round mouth feel, and a long structured finish. Winemaking: The grapes, picked from organically grown trellised vines, were harvested by hand at 23 to 24 °B and cooled overnight to 5 ° Celsius. The next day the whole bunches were pressed, the juice settled overnight and fermented naturally with wild yeast in 600 liter second and third fill French oak barrels at between 16 and 18 ° Celsius. After fermentation the wine was stirred on lees for the first two months and then kept on the lees for another eight months, after which the wine was bottled unfiltered. Ageing: Drink immediately or over the next three years.
